Chef Dayn Smith & Nancy Moon
Chef Smith creates impressive menus and an extraordinary wine list (a passionate hobby). Houndstooth offers more than 100 wines by the glass curated from an impressive collection of over 3,000 bottles sporting 1,000 different labels. Chef Smith shares his love and knowledge of wine with guest service staff in a mandatory weekly wine class.
Chef Smith and Nancy Moon also own the very successful restaurants Perla at La Concha Hotel in San Juan, Puerto Rico as well as Stingray Café and Ballyhoo Bar and Grill in El Conquistador Resort. He was the opening Executive Chef of El Conquistador Resort, responsible for a $ 30 million food and beverage operation. He was first promoted to Executive Chef at age 21 working for the United Nations Plaza Hotel in New York City. Since then, he has headed the kitchen at numerous world-class hotels and restaurants, including The St. Moritz, Le Beau Rivage Palace, The Detroit Plaza Hotel, the Michigan Inn, and the Condado Plaza.
Chef Smith started his career at age 11 working in restaurants in and around his native Detroit home, as well as the Hillcrest Country Club. He then attended the Culinary Institute of America in Hyde Park, New York graduating with high honors at the age of 19. He returned to the CIA numerous times for specialized training as well as attending a summer course at Cornell for management training.
Chef Smith has been featured in numerous publications and TV shows. He garnered many gold and silver medals competing in American Culinary Federation, Caribbean Culinary Federation and the Culinary Olympics.
Chef Smith lives in Puerto Rico and Virginia (Glen Gordon Manor) with his wife, Nancy and their four children. When not cooking or collecting wine, they enjoy riding horses in Virginia, and scuba diving in Puerto Rico as well as ice hockey with their two youngest boys.
Nancy Moon shares her husband’s passion for culinary excellence and deep love for sharing their homes and restaurants with friends and guests from all over the world. Their passion for the classics and support of the arts (Castleton Festival – Chef Smith is also on the board) exemplifies their honest and caring attitude for what their friend and Castleton Festival founder Maestro Matzaal created, in supporting young musicians starting out in life.
Nancy oversees the interior décor at Glen Gordon Manor and Houndstooth Restaurant that has become a major influence on all visiting guests. There is a growing list of admirers who cannot wait to see what ambient décor Nancy has created for their guests in lodging, dining or the soon-to-be Tack Room Spa at Glen Gordon Manor.
